Lamb recipes for the festive season.

The festive season is for BBQs - catching up with loved ones, and pretending you didn’t just eat your third “taste test” sausage.


To help you keep things delicious (and decisively lamb-shaped), we’re sharing six days of lamb recipes to enjoy this summer.


To kick it off, Sam Burke (MLA Corporate Executive Chef) has one request: get lamb on the BBQ and lock LambEx into your calendar.

Sam Burke, Corporate Executive Chef from Meat & Livestock Australia, is sending Christmas wishes to the LambEx community.

Six days of lamb

Sam and the MLA team have curated a special collection of lamb recipes to keep all your guests happy this festive season.


1. Red wine lamb shoulder

Slow-braised lamb shoulder with red wine and aromatics. An easy to prepare, melt-in-your-mouth crowd-pleaser.




2. Mediterranean butterflied lamb

Juicy butterflied lamb, grilled to smoky perfection and paired with a vibrant medley of zucchini, tomatoes, chickpeas, olives and feta.




3. Smoked lamb shank tacos

Slow‑smoked lamb shanks, shredded and served in warm tortillas with zesty pico de gallo, tangy cheese and fresh lime.




4. Spicy lamb leg & green mango salad

Butterflied leg of lamb, marinated, char grilled, then sliced over a vibrant salad of zesty green mango, crisp beans, cucumber and tomato.




5. Sweet-savory lamb sosaties

Tender lamb cubes marinated in apricot-jam curry glaze, skewered with apricots, onion and capsicum, then barbecued and basted until sticky and charred.




6. Sumac lamb rack with pearl couscous salad

Elevate your festive feast with this roasted to perfection, tender and juicy sumac-spiced lamb rack, topped with a vibrant pearl couscous salad.
