Key Dates


Who can enter & livestock requirements:
-
Australian lamb producers across all production systems (grass, grain-assisted, or feedlot finished).
-
Each entry is one line of 100 market-ready lambs from a consistent management group. ​

Target specs: 22–32 kg HSCW (sweet spot ~26 kg) and minimum Fat Score 2 (≈ 6 mm GR). ​
-
Every lamb must carry a working NLIS eID tag.
Processors & timing


-
Choose a processor: JBS Brooklyn (VIC), JBS Bordertown (SA) or Gundagai Meat Processors (NSW).

Timing: Two processing windows will be available: Nov–Dec 2025 and Feb–Mar 2026. Specific dates will be confirmed with producers to suit turnoff, with capacity managed evenly across sites.
Lamb delivery

Transport: Producers organise transport and delivery to their selected plant on their scheduled day.
​​

Finishing options: Choose between consigning lambs direct to the works or through a commercial feedlot organised by the producer.
What happens at the processor
-
Lambs are graded by the Meat & Livestock Australia Meat Standards Australia (MSA) grading team using AUS-MEAT accredited devices.

Each carcase receives objective measures: Intramuscular Fat (IMF), Lean Meat Yield (LMY), Carcase Weight → combined to produce an MSA Index for each carcase.

Where possible, results will be linked to on-farm and growth rates provided via eID
-
Any defects/downgrades are noted.

Dataset benchmarking

Each entrants group of lambs will be benchmarked against the collective dataset.

Results will be pulled together and compared across groups to show the key lessons for LambEx delegates.

Instead of declaring outright winners, the Showcase will highlight standout results - from top MSA grading to strong lean meat yield - giving credit where it’s due
Carcase data analysis and producer support
-
Video will capture production systems - from grass to grain - plus processing and on-hook demonstrations.

Producers share their stories, backed by expert insights.

Footage will show how assessment technology works, link carcase results to consumer preferences, and highlight different production pathways and outcomes.

Applications reviewed by The LambEx Carcase Showcase Sub-Committee and the selected processor.

Entrants will be contacted to confirm acceptance and provided with further instructions.
